Lima Bean Pie. My dear friend made one for one of our Clay parties. She called me for advice. First of all she tried to moosh the beans with a hand mixer. Bad idea #1. Turns out her blender started smoking when she tried to use it so she threw it out. Next she couldn't figure out why the pie did not bake right. She said she bought one of those crusts in the foil pan. Frozen? I asked. No, from the shelf. Rut row. Graham cracker crusts are not for baking. I asked if she ever made a pie? NO?? Okay, that explains it. So being the kind friend I am I told her to buy the frozen pie shells and get a blender. Voila!! Pie.

Actually, the pie was very good. Tastes a little like applesauce cake with a texture of pecan pie. Turns out cats like it too. Our hostess' cat was licking the box that it was stored in.

Moral of the story:

  1. Clay, don't leave your Lima Bean pie lying around cuz cats like it and may attract a cat or two.

  2. If you have never made a pie, seek help first.
